A few months ago I posted a recipe for chili that was inspired by memories of my mom’s cold weather comfort foods. It was only 40 degrees in Las Vegas that day and the recipe seemed appropriate. Today I’m sitting in my home in Colorado staring out the window not quite inspired by the thought of going out and shoveling 11 inches of snow off my drive. In fact I’m much more inspired to go into the kitchen and whip up a steaming pot of my famous Chicken Tortilla Chowder. I’m not really sure where the tortilla part came from but it sounds good so I’ll keep it.
But before I head for the kitchen let me share one of Grubdom’s best kept and most delicious comfort food secrets. If you never try another one of my recipes you can’t miss trying this one! This chowder is so flavorful you’re not going to believe it can be achieved Grub For Guys style. Just open some cans, combine the ingredients below, and turn up the heat. Now drink a couple of beers then dish it up. That’s it!
2 13 oz. cans of chicken breast (drained)
1 12 oz. can of evaporated milk
1 14 oz. can of green enchilada sauce
1 cup water
1 cup of Tostitos medium salsa con queso
½ cup sweet corn
1 tblsp. Cilantro
Premium corn chips
1/8 tsp pepper to taste
I serve as chowder over chips, as gravy over all kinds of burritos, as a sauce for chicken enchiladas. Sometimes I even thicken it and use it as a party dip!

I’d like to try this recipe with some left over grilled salmon fillet. What do you think ?
And Grubmaster do you have any recipes for green chili? Right now I got a 70 mile drive to the nearest decent green chili, and it’s only decent not anything I would consider great.
What I crave is the chili from 4c’s that was on Sante Fe Drive YUM.
